Secret Ingredient Potato Salad

+ 4 lb. red potatoes with skin, washed and cut into medium chunks
+ 1/2 c. finely chopped red onion + 1/3 c. seasoned original flavor rice vinegar + 3 Tbsp. olive oil + 1 tsp. salt + 1/4 tsp. black pepper + 2 hard-boiled eggs, finely chopped + 1/3 c. packed cilantro leaves, chopped + 1/4 c. mayonnaise What to do:
1. In a large pot of boiling water, cook potatoes 15 to 20 minutes, or until fork-tender; drain.
2. Meanwhile, in a large bowl, combine onion, vinegar, oil, salt, and pepper; mix well. 3. Add warm potatoes to bowl and toss gently to coat. Cover and chill 30 minutes. 4.
