* 12 bratwurst
* 1/4 c. olive oil
* 3 large sweet onions, chopped
* 3 large peppers, chopped
* 1/4 c. red cooking wine
* 1/4 c. balsamic vinegar
* 1 Tbsp. sugar
* 1 tsp. finely minced fresh thyme
* 1/2 tsp. salt
* 1/4 tsp. ground pepper
1. In a large deep skillet heat oil over medium-high heat; add peppers, onions and sauté, stirring frequently, until very soft, about 10-15 min.
2. Add cooking wine, vinegar and sugar, reduce heat to low and simmer, stirring occasionally, until almost all of the liquid has evaporated, about 10 min. The peppers and onions should be slightly caramelized.
3. Stir in thyme, salt and pepper. Remove from heat and cool. Keep chilled until ready to serve.
4. Preheat grill at medium-hot setting. Grill bratwurst directly over fire, turning, until evenly browned, about 5-7 min. Remove from grill and serve with marmalade.
