Vegetable and Wisconsin Cheese Medley

Prep Time: 10 Min. Cook Time: 40 Min. What you need:

+ 1 c. thinly sliced carrots
+ 1/4 c. chopped celery + 1/4 c. water + 1 pkg. (10 oz.) frozen cut broccoli + 1 can (16 oz.) cream-style corn + 1-1/2 c. ( 6-oz.) shredded Wisconsin Cheddar cheese + 3/4 c. French fried onion rings What to do:
1. In a medium saucepan, combine carrots, celery, and water. Bring to boiling; reduce heat. Cover and simmer for 7 min. Add broccoli; cover and simmer about 10 min. more or until vegetables are tender. Drain well.
2. Stir in the corn and Cheddar cheese. Pour into a 10x6x2-in. baking dish. Sprinkle the onions rings on top. Bake at 350° F for 20 to 25 min. or until heated through. * Microwave Directions: 1. In 1 1/2 qt. casserole, combine carrots, celery, and 2 Tbsp. water. Cover and microwave on high for 3 min. or until vegetables are crisp-tender. Add broccoli; microwave, covered, for 8 to 10 min. more or until vegetables are tender, stirring twice. Drain well. 2. Stir in corn and cheese. Cover and microwave on high for 5 min. or until mixture is heated through and cheese is melted, stirring once. Sprinkle onion rings on top. Microwave, uncovered, for 30 sec. |
